What a great thread! I'm still compiling my complete list, but a few songs that immediately come to mind are:

Guitar solo (by Joe Walsh) in In the City by the Eagles

The muted-string percussive chords in Heartbeat by Buddy Holly

Guitar power chords in Long Time and More than a Feeling, by Boston

Slow organ intro leading into the twangy guitar in Shiny Happy People by R.E.M.

Piano intro and instrumental bridges in Isn't it Time by the Babys

Slow, classical rhythms at the beginning and throughout No Sugar Tonight by the Guess Who

(I would also like to check out the songs others have posted in this thread)

I'm going to leave a lot out, but two that I like a lot are from Lush's Split album.

"Blackout" contains a ringing guitar "duel" between Miki Berenyi and Emma Anderson that puts Chryssie Hynde to shame.

The instrumental climax of "Starlust" also can't be ignored. I actually want the sheet music to that, and not just the guitar tabs.

Aside from that, the ending of "Anti" by The Vandals is something that has to be heard. I was listening to it with headphones on WUSB years ago, and it literally went through one ear and out the other.

There are too many others I'll have to add to my list later on.

I have sooooo many as well...

https://www.youtube.com/watch?v=OkZKZwsjrUE
Nice Harpsichord/Celeste Solo, nearly drowns the tamboura and electric violin.
https://www.youtube.com/watch?v=T4Y3iTJtzgM
Similar to "Celeste", but has a beautiful english horn solo rather than a celeste.
https://www.youtube.com/watch?v=3YgmqKr7njQ
Great String arrangement on this.
https://www.youtube.com/watch?v=SqAh1dQu_pg
I like the flute solo on here...has an undertone like "California Dreaming".
https://www.youtube.com/watch?v=jTiDUM7QW70
Flourishing brass in this.

Here's another interesting song with THREE solos...electric sitar, piano, and oboe! Then it comes to an interesting drum solo!
https://www.youtube.com/watch?v=-d56pbx3vUU

This song has a great accordion solo....

And who can remember the only marimba solo in a song?...

The section in Jackson 5's Dancing Machine. The part where Michael does the robot in sounds extremely great! It goes "babang, babang,babang.....

Randy Meisner's bass line on the Eagles's "Life In the Fast Lane", just before Don Henley sings the line, "Blowin' and burnin', blinded by thirst . . . "

Ray Manzerek's organ interlude in Riders On The Storm byThe Doors. It was criticized by some who thought it was too "jazzy" and "Lounge like". But I love it!

Also the long instrumental interlude of The Doors "Light My Fire" which is rarely /if ever played because of the length. It lengthens the song to around 7 minutes and back in the day AM radio didn't play anything that was over 3 or 4 minutes long. Even when I hear it on FM stations today it is never played the full length which is too bad because it highlights all three of the musicians talents. The interlude is severely chopped off and to me it is very noticeable and ruins the song!

The music in "Wreck Of The Edmund Fitzgerald" sends chills through me.
It is very haunting and sad. It works with the lyrics beautifully!

With songs that are long...

https://www.youtube.com/watch?v=uBYPPjLJO5U
Interesting flute solo, when Phil Collins did this song in 1980 live...6 minutes were cut from it!
https://www.youtube.com/watch?v=o591slQgirA
What can I say? Hendrix guitar solo in a military-style then the 2nd part is basically instrumental.
https://www.youtube.com/watch?v=k8dvOmyLwdk
This is actually 4 songs, but there's good guitar solos in this song as well as a celesta solo.
