Sometime in mid-season of GT, why did Florida Evans leave for a
while and leave Wilona in charge? Was it because she went to
revisit Maude?

No, supposedly it was to take care of a sick aunt.

What season are you referring To?

During the first 4 seasons, Esther Rolle was in almost all episodes except a few:

The Enlistment (2nd Season)
J.J. in Trouble (3rd Season)
A Friend in Need (4th Season)

Esther Rolle was dropped from the cast during the entire 5th Season and returned for the 6th Season. In the final season she did not appear in the following 4 episodes:

The Witness
The Evans' Dilemma
Blood Will Tell
J.J. and T.C.

I would assume she appeared in The Traveling Christmas but I can't say for sure, because it's one of the only episodes that I haven't seen.
