Have you ever had an éclair?
I'm not sure if I have had an éclair or not. In some places éclairs are called long johns.

An éclair is a long, thin pastry made with choux pastry filled with a cream and topped with icing. The dough, which is the same as that used for profiterole, is piped into an oblong shape with a pastry bag and baked until it is crisp and hollow inside. Once cool, the pastry then is filled with a coffee- or chocolate-flavored pastry cream (crème pâtissière), custard or whipped cream, and topped with fondant icing of the same flavor as the filling. Other fillings include pistachio- and rum-flavored custard, fruit-flavored fillings, or chestnut purée.
In some parts of the United States, long johns are marketed under the name éclairs, though the two are not identical. A long john uses donut pastry and is typically filled with vanilla pudding, making it a simpler and inexpensive alternative to the éclair. The Cadburys chocolate and confectionery company also sells a chocolate-filled candy by the name in certain parts of the world.

I've never had an eclair per se, but I have consumed quite a few long johns. They are one of the pastries we can choose from at our increasingly infrequent informational meetings at work. I like Bavarian creme filled bismarks, more, however, because they fill the long johns with some kind of VERY rich cream that kind of hurts my teeth.
But OH that Bavarian creme is goooooood. :)

Eclairs are sold in the bakery section of the grocery store, so my husband picks them up sometimes; pack of four with chocolate frosting topping. He really likes them, but I'm not too crazy over them. I take off most of the frosting.
I hope Sonny doesn't mind my saying this, but we've talked about how our late mothers loved eclairs, and how we would bring them to them sometimes when we visited; especially on Mother's Day or their birthdays.

When I hear long johns I think of clothing.
I've never heard of a Bavarian bismark.

I worked 3 years in a donut shop so yes, I have had my share of eclairs!!!:lol:
I was told they're called eclairs in the south, and long johns in the north, but I lived up north, too, and have always called them eclairs.
We had 2 kinds, they were all long with chocolate icing on top but I would fill them with either bavarian custard(the yellow cream that we would use for Boston Cream donuts, too) and what we called Vanilla Angel, which was the white cream. Vanilla Angel was so good!!! I could eat that stuff by itself!!!:D

i don't really have much of a sweet tooth, but I do like the Boston-cream (same as Bavarian cream?) -filled Bismarcks, my favorite doughnut.
my junior high (at least when I went there) didn't actually have a cafeteria, but it had a student-run store that sold eclairs; they were very simple with whip cream filling and chocolate icing, they didn't have much selection so i got those a couple of times.

They are luscious but I don't eat them anymore ( or maybe a quarter of one, at most, around a big holiday). My REAL weakness is cheesecake, any & all kinds.

Yes both posters I agreed with. I live in the North and have always heard the pastries called Eclairs. Long Johns reminds me of mens underwear of the past too
